Good morning! The sun is out and the garden screams for attention so there is no time to plan a complicated meal. This simple baked fish from Festa Italiana (page 185) is just perfect. A white fish fillet sandwiched between a layer of lemon slices and a garlicky breadcrumb crust. Complement with a crunchy salad of fennel and orange and a dry white. Perfect Friday dinner!

Today I was really in the mood for savory crespelle: paper thin pancakes (crepes) which I filled with sauté Swiss chard blended with creamy ricotta, a sprinkle of ham, mozzarella and then topped wit tomato sauce and lots of Parmigiano. Carnival has gone without much fuss about it this year but we enjoyed celebrating with a fun cooking class hosted by @wilsoninwonderland (thank you Juliana!). We made the bocconotti cookies I published on Festa Italiana which are based on a buttery and sweet pastry, filled with cinnamon flavored ricotta and brushed with alchermes, an Italian liqueur with a floral and spiced aroma. The only problem with this recipe is that you never make enough! 😋⁠
Looking forward to connect with so many of my friends for a live online cooking class. We’ll celebrate Valentine with a deliciously creamy pasta with roasted squash and spinach and a chocolate pannacotta topped with glazed cinnamon apple. Can’t wait to see you! 💓💕❤️🌹
