Online Cooking class alert: Asparagus, strawberries, crema diplomatica and super easy homemade stringozzi for the next Cookbook Club event!⁠
Today I was really in the mood for savory crespelle: paper thin pancakes (crepes) which I filled with sauté Swiss chard blended with creamy ricotta, a sprinkle of ham, mozzarella and then topped wit tomato sauce and lots of Parmigiano. Head over to today’s story to learn how to make this deliciousness. I am also thinking to include this in the menu of the next online cooking class, what do you think? *
Carnival has gone without much fuss about it this year but we enjoyed celebrating with a fun cooking class hosted by @wilsoninwonderland (thank you Juliana!). We made the bocconotti cookies I published on Festa Italiana which are based on a buttery and sweet pastry, filled with cinnamon flavored ricotta and brushed with alchermes, an Italian liqueur with a floral and spiced aroma. The only problem with this recipe is that you never make enough! 😋⁠
Looking forward to connect with so many of my friends for a live online cooking class. We’ll celebrate Valentine with a deliciously creamy pasta with roasted squash and spinach and a chocolate pannacotta topped with glazed cinnamon apple. Can’t wait to see you! 💓💕❤️🌹
Are you making candied orange peels? At this time of the year oranges are so perfect, fresh, juicy, impossibly fragrant. The candied peels are the crown jewels of the pantry, to be used for cookies, sweet breads and to decorate puddings and special salads. Don’t miss the opportunity to make some. After weeks of rain and gray skies, February has given us a handful of mellow and sunny days which we are using to prune our "baby" olive trees. They are only 5 years old, can you see them? the little silvery plumes of leaves barely taller than the sparse underbrush on our hill. It's slow work, there are 200 of them. They need to be cut into shape and bound to the poles to defend them from animals and the strong winds. It's so calming and inspiring. Tomorrow it will rain again, but this has been a gift.⁠
